The German Celiac Society advocates the careful use of oats in a gluten-free diet, even if oats are technically not gluten-free. However, purchased products can be contaminated, i.e. they contain traces of flours containing gluten such as wheat flour.

Therefore, when buying oatmeal or oat flakes, choose specially labeled products that do not contain any traces of other types of grain. You can then use it to make the delicious oat muffins.

Oatmeal muffins without gluten and lactose.

ingredients

  • 1 cup of plant milk (coconut, oat, rice or almond milk) (200 ml)
  • 3 cups of ground oats (300 g)
  • 1 cup rice flour (100 g)
  • 1 cup of brown sugar (200 g)
  • 1/2 cup coconut or sunflower oil (110 g)
  • 2 eggs
  • 1/2 squeezed lemon
  • Vanilla or cinnamon essence
  • baking powder

If you like the recipe, you can try other flavors like candied oranges, chocolate chips, desiccated coconut, cocoa, etc.

preparation

  • First preheat the oven to 200 C.
  • Mix the two eggs well with a whisk. You can also use a mixer to make the muffins soft and airy.
  • Add oil, lemon juice, vegetable milk and sugar and stir everything well. Then add the spices (vanilla, cinnamon …).
  • Then mix the oatmeal and rice flour in a separate bowl.
  • Slowly fold in the flour mixture with the baking powder into the stirred dough.
  • Now put the dough in the refrigerator for half an hour.
  • Then pour the batter into the muffin cups.
  • Then bake in the oven at 180ºC for 15 to 20 minutes.
  • You can then do another test with a wooden stick to see if the muffins are ready. Then let it cool and sprinkle with a little sugar if desired.

Instead of brown sugar, you can also use honey, molasses, agave or maple syrup. Stevia is also excellent.
