Marinated chicken breast: ingredients

  • 3 skinless chicken breasts (700 g)
  • 1 onion (100 g)
  • 2 peeled garlic cloves (35 g)
  • 1 lemon (60 g), untreated, as the zest is also used
  • 1 pinch of cayenne pepper (5 g)
  • 2 cups coconut milk (500 mL)
  • 1 pinch of paprika powder (5 g)
  • 1 pinch of ground caraway seeds (5 g)
  • 2 tablespoons of olive oil (30 mL)
  • 1 pinch of coriander (5 g)
  • 1 pinch of fennel (5 g)
  • 2 pinches of ground black pepper (10 g)
  • 1/2 cup pureed tomatoes (125 mL)
  • 1 cup of rice (120 g)
  • 2 pinches of salt (10 g)
  • 1/2 cup vegetable broth (125 mL)
  • 1 pinch of grated ginger (5 g)

preparation

  1. Thoroughly clean and wash the chicken breasts. Then you cut them into pieces.
  2. Season this with salt and pepper in a glass bowl.
  3. Then add the following ingredients: lemon zest, lemon juice, cayenne pepper, grated ginger. Mix everything well and put in the refrigerator for at least two hours.
  4. In the meantime, finely chop the onion and garlic cloves.
  5. Heat olive oil in a pan and fry the onion and garlic.
  6. Then add the marinated chicken breast pieces, raise the temperature slightly and let everything simmer for 10 minutes.
  7. Then add the spices and the pureed tomatoes. Fry everything, stirring constantly.
  8. Now you add the white rice and stir everything for another two minutes. Then you add the coconut milk and the vegetable stock to the pan.
  9. Now let everything simmer on a low heat for about 30 minutes.
  10. You have to make  sure that the rice always has enough liquid. If necessary, add some more water. Once everything is done, you can serve this delicious dish.
