The Waldorf salad originally consisted of sour apples, dried fruits, cabbage, lettuce, cream and raisins or blue cheese. Over time it grew in popularity and was served in one of the finest hotels in the world: the Waldorf-Astoria. Hence the name of this delicious recipe comes from.

In both recipes, vegetables, fruits and healthy dried fruits are the main ingredients.

The original Waldorf salad: a recipe from 1893

As already mentioned, we start with the original recipe, which has a long tradition,  but is still as popular today as it was then. Let us begin!

ingredients

  • 2ΒΌ cup celery sticks (250 g)
  • 2 red apples
  • 1 pear
  • 2 tablespoons of walnuts (30 g)
  • 2 tablespoons of chopped parsley (30 g)
  • 1 tablespoon honey (25 g)
  • 1 tablespoon lemon zest (15 g)
  • 3 tablespoons of heavy cream (45 ml)
  • 2 tablespoons lemon juice (30 ml)

preparation

  • Wash the celery stalks,  cut them into slices and sprinkle them well with lemon juice.
  • After a few minutes they take on the lemon taste.
  • Wash the apples and pears and cut them into fine slices.
  • Then you add the fruit slices to the celery and mix everything carefully.
  • Then you add the chopped parsley to the mixture.
  • Peel the nuts and add them to the salad along with the honey.
  • At the very end you add the cream and mix everything well.
  • Now you can serve and enjoy the delicious Waldorf salad.

    Waldorf salad: a modern recipe

    Waldorf salad: a more modern recipe
    For this recipe we use mayonnaise, which makes the marinade very creamy and mild.

    ingredients

    • 1 cup of mayonnaise (235 g)
    • 2 tablespoons of sugar (30 g)
    • 3 tablespoons lemon juice (45 ml)
    • 1 pinch of salt
    • 4 small red apples
    • 2 medium-sized celery stalks with leaves
    • 1 cup of nuts (150 g)

    preparation

    • Wash the celery stalks and cut them into slices. Save the leaves that you will need later.
    • Then you wash the apples and cut them into cubes. Sprinkle some lemon juice on top to keep them from oxidizing.
    • Chop the nuts so they’re a little smaller. 
    • Mix the remaining lemon juice with the mayonnaise, salt and sugar. This will give you a delicious marinade.
    • Finally, put all the ingredients in a bowl and ice the marinade on top. Place the salad in the refrigerator for about 40 minutes and decorate it with the celery leaves before serving.
